For Biryani Masala Paste:

1. 2 tbsp curd (yogurt)
2. 1 tbsp ginger garlic paste
3. 2 green chilies (slit)
4. 1/2 tbsp turmeric powder
5. 1 tbsp red chili powder
6. 1 tbsp garam masala or biryani masala
7. Salt to taste

For Garnishing:

1. Fried onion (birista)
2. Fresh coriander leaves (chopped)
3. Mint leaves (chopped)
4. A few saffron strands soaked in 2 tbsp warm milk
5. 2 tbsp ghee or butter

Step by Step Method:

Step 1: Cook the Rice

1. Boil water with bay leaf, cardamom, cinnamon, and salt.
2. Add soaked rice and cook until 90% done (grains should be slightly firm).
3. Drain and set aside.

Step 2: Prepare the Vegetables:

1. Heat oil or ghee in a pan.

3. Let it rest for 10 minutes before opening.
